Curried Egg And Lettuce Sandwich

Time required 20 minutes. Makes about 2 sandwiches.

1) Hard boil 3 eggs and remove the shell, allow to cool. Mash with a fork and add 2 tablespoons mayonaise. Add a little chopped parsley and season to taste with curry powder.

2) Spread between 2 slices of bread, add shredded lettuce.

I do you yo all will try it and enjoy it.

Yummy....

I have a similar sandwhich, but I use Avocado instead of the lettuce.

I never thought about using avocado instead of lettuce. Fresh eggs sounds great but I don't have any chooks, but I do have lettuce growing, but it won't be ready for at least another week or 2.
